Il consiste typiquement en deux pots en terre imbriqu\u00e9s : le pot int\u00e9rieur, imperm\u00e9able, contient les aliments ; le pot ext\u00e9rieur, poreux, est entour\u00e9 de sable imbib\u00e9 d\u2019eau. L\u2019eau s\u2019\u00e9vapore \u00e0 la surface ext\u00e9rieure, ce qui provoque un refroidissement du pot int\u00e9rieur.
